  • 4 large eggs
  • 2 cups brown sugar
  • 1 tsp vanilla extract
  • 1 1/2 cups vegetable oil
  • 2 cups all-purpose flour
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 1/2 tsp salt
  • 115g softened butter
  • 200g cream cheese (softened)
  • 3 cups powdered sugar

Instructions

  1. Preheat your oven to 170°C (340°F). Grease and line two 8-inch round cake pans with parchment paper.
  2. In a mixing bowl, whisk together brown sugar, eggs, vegetable oil, and vanilla until well combined.
  3. Fold in the shredded carrots gently into the wet mixture.
  4. In another bowl, combine flour, baking soda, cinnamon, and salt. Gradually add to the wet ingredients without overmixing.
  5. Divide the batter evenly between the prepared pans and bake for about 30-40 minutes or until a toothpick comes out clean.
  6. Allow cakes to cool on wire racks for at least 30 minutes before removing from pans.
  7. For the frosting, beat softened butter and cream cheese together until fluffy. Gradually add powdered sugar until smooth.
  8. Once the cakes are completely cool, spread cream cheese frosting between layers and over the top and sides of the cake.
