  • 1 lb lean ground beef
  • 4 tbsp butter
  • 1/2 medium onion (chopped)
  • 2 ribs celery (chopped)
  • 2 medium carrots (chopped)
  • 1 tbsp minced garlic
  • 1/3 cup all-purpose flour
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 tbsp yellow mustard
  • 1 lb Russet potatoes (peeled and diced)
  • 2 cups shredded cheddar cheese
  • 1 tbsp fresh lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot, cook chopped bacon over medium-high heat until crispy. Remove and drain on paper towels.
  2. In the same pot, brown the ground beef for about 4–5 minutes. Drain excess fat.
  3. Melt butter in the pot; add onion, celery, and carrots. Sauté for about 4–5 minutes until softened.
  4. Stir in minced garlic and cook for another 30 seconds.
  5. Sprinkle flour in while stirring continuously until well mixed.
  6. Gradually whisk in chicken broth, then add heavy cream, mustard, potatoes, and browned beef. Bring to a boil; reduce heat and simmer partially covered for about 15 minutes.
  7. Remove from heat; stir in cheddar cheese and lemon juice. Adjust thickness with more broth if necessary.
  8. Season with salt and pepper to taste before serving.
