  • 2 medium zucchinis
  • 4 cloves garlic, finely chopped
  • 1/4 teaspoon crushed red pepper flakes
  • 4 tablespoons extra-virgin olive oil
  • 2 oz mozzarella cheese, shredded
  • 1 oz Parmesan cheese, finely shredded
  • 2 tablespoons fresh basil, torn

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice each zucchini in half lengthwise to create four 'steaks'. Score the flesh side with a crosshatch pattern and season with salt. Let them sit for 15 minutes.
  3. In a skillet over medium heat, combine chopped garlic and crushed red pepper flakes with 2 tablespoons of olive oil. Sauté until fragrant, about 1-2 minutes. Set aside.
  4. Heat another tablespoon of olive oil in the skillet. Pat the zucchini dry and place them flesh-side down in the pan; sear until golden brown (about 2-3 minutes).
  5. Transfer zucchini to a baking sheet and brush with garlic oil. Bake for 8-10 minutes until tender.
  6. Top with mozzarella and Parmesan cheese; broil for an additional 2-3 minutes until bubbly and slightly browned.
  7. Serve garnished with torn basil and extra red pepper flakes if desired.
