  • 1/3 cup pure maple syrup
  • 1 large egg yolk, room temperature
  • 1/2 cup canned pumpkin, blotted
  • 2 teaspoons vanilla extract
  • Optional: 1/2 teaspoon maple extract
  • 1/2 cup granulated sugar for rolling
  • 1/2 teaspoon pumpkin or chai spice blend for rolling

Instructions

  1. Brown the butter in a saucepan over medium heat until golden and nutty. Let cool slightly.
  2. In a bowl, whisk together flour, spice blend, baking soda, and salt.
  3. In a separate bowl, mix the browned butter, brown sugar, and maple syrup until smooth. Stir in the egg yolk, pumpkin puree, and vanilla until well combined.
  4. Gently fold in the dry ingredients until just combined.
  5. Cover the dough and chill for at least 8 hours or overnight.
  6. Preheat the oven to 350°F (177°C) and line baking sheets with parchment paper.
  7. Roll chilled dough into balls and coat in spiced sugar before placing on baking sheets.
  8. Bake for 12-14 minutes until edges are golden but centers remain soft. Let cool on sheets for a few minutes before transferring to racks.
