1 large spaghetti squash
2 large chicken breasts (chopped)
3 cups broccoli florets
4 tablespoons cream cheese
1/2 cup plain Greek yogurt
1.5 cups mozzarella cheese (shredded)
3 tablespoons olive oil (divided)
2 shallots (minced)
6 cloves garlic (minced)
1 teaspoon salt
1/2 teaspoon freshly grated black pepper
2 teaspoons Italian seasoning
Instructions
Preheat your oven to 400°F (200°C). Halve the spaghetti squash lengthwise, scoop out seeds, drizzle with olive oil, and season with salt and pepper.
Place the squash cut-side down on a baking sheet lined with parchment paper and roast for 40-50 minutes until tender.
In a skillet, heat olive oil over medium heat. Sauté minced shallots until translucent, add garlic, then chicken pieces seasoned with salt, pepper, and Italian seasoning. Cook until golden brown.
Stir in broccoli florets and cover to steam for about 5 minutes until bright green.
Remove from heat and mix in cream cheese, Greek yogurt, Parmesan cheese, and half of the mozzarella.
Stuff each roasted squash half with the mixture and top with remaining mozzarella before returning to the oven for an additional 15-20 minutes until bubbly.
