  • Sea salt and freshly ground black pepper
  • ¼ cup gluten-free flour or Arrowroot powder
  • 3 fresh garlic cloves, minced
  • 1 cup chicken bone broth
  • 2 tbsp fresh lemon juice (from 1 large lemon)
  • 1 jar (14 oz) quartered artichoke hearts (water-packed)
  • ½ cup pitted green olives, sliced diagonally
  • Fresh oregano or dried oregano

Instructions

  1. Prepare chicken by pounding it to an even thickness for uniform cooking.
  2. Season chicken with sea salt and black pepper, then coat lightly with gluten-free flour.
  3. In a large skillet, melt butter over medium heat and sear chicken for about 3 to 4 minutes on each side until golden brown. Remove from skillet.
  4. In the same skillet, sauté minced garlic until fragrant. Whisk together chicken broth and additional flour until smooth; add to the skillet along with lemon juice.
  5. Return chicken to the skillet along with artichokes, olives, and oregano. Simmer covered over low heat until chicken is cooked through.
  6. Serve hot, garnished with fresh lemon slices.
