  • 2 cups cooked chicken (diced)
  • 1 ½ cups grated Swiss cheese
  • 2 cups fresh spinach
  • 1 cup whole milk
  • 2 tablespoons unsalted butter
  • 2 tablespoons all-purpose flour
  • ¼ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 large egg white (lightly beaten)

Instructions

  1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut the thawed pastry sheets into 5-inch squares and keep chilled.
  3. In a saucepan over medium heat, melt butter, then add flour and salt to create a roux. Gradually whisk in the milk until thickened.
  4. Stir in fresh spinach and diced chicken, followed by one cup of grated Swiss cheese until well combined.
  5. Place puff pastry squares on the baking sheet, spoon filling onto each square, and top with remaining cheese.
  6. Fold corners toward the center to seal, brush with beaten egg white, and bake for 18-20 minutes or until golden brown.
