1 cup finely diced pineapple
1/2 cup chopped celery
1/4 cup sliced almonds
2 tablespoons fresh chopped cilantro
1/2 cup plain Greek yogurt
1 tablespoon lemon juice
1 teaspoon Dijon mustard
Salt to taste
Butter lettuce leaves or croissants for serving
Instructions
In a large mixing bowl, combine the shredded chicken, diced pineapple, chopped celery, sliced almonds, cilantro, and optional red onions.
