  • 1 chicken breast
  • 4 slices sharp cheddar cheese
  • 4 slices thick-cut turkey bacon
  • 1 beefsteak tomato, sliced
  • 4 slices sturdy bread (French, focaccia, or sourdough)
  • Chipotle mayo (made with 1 egg yolk, ¼ cup neutral-flavored oil, 2 tsp lime juice, 1 chipotle pepper in adobo sauce, ½ tsp smoked paprika, ½ tsp Dijon mustard, 1 tsp honey, 1 tsp kosher salt, ½ tsp freshly cracked black pepper)

Instructions

  1. Prepare the chipotle mayo by whisking egg yolk with Dijon mustard until smooth. Gradually add oil while whisking to create an emulsion. Stir in lime juice, chipotle pepper, smoked paprika, honey, salt, and pepper until well combined.
  2. Season the chicken breast with salt and pepper. Grill or pan-sear over medium heat for 8–10 minutes until cooked through.
  3. Butter one side of each slice of bread and spread chipotle mayo on the unbuttered side.
  4. Layer two slices of cheddar cheese on one slice of bread followed by grilled chicken, turkey bacon, tomato slices, and then another layer of cheddar cheese before topping with another slice of buttered bread.
  5. Grill the assembled sandwich over medium heat for 3–5 minutes per side until golden brown and the cheese is melted.
  6. Let rest for 2–3 minutes before slicing in half and serving.
