  • 240 ml (1 cup) lukewarm milk
  • 7 g (1 1/2 tsp) dry baker’s yeast
  • 430 g (3 1/2 cups) all-purpose flour
  • 60 g (1/3 cup) granulated sugar
  • 1 pinch salt
  • 1 room temperature egg
  • 70 g (1/3 cup) melted butter
  • 50 g (1/2 cup) unsweetened cocoa powder
  • 120 g (2/3 cup) brown sugar
  • 2 tsp ground cinnamon
  • 55 g (1/4 cup) softened butter for filling
  • 1 tsp vanilla extract

Instructions

  1. Mix lukewarm milk with dry yeast and let sit for about 5–10 minutes until frothy.
  2. In a stand mixer bowl, combine flour, sugar, cocoa powder, and salt. Mix on medium speed.
  3. Add egg, melted butter, and the milk-yeast mixture; knead for about three minutes until smooth.
  4. Cover and let rise at room temperature for 1.5 to 2 hours until doubled in size.
  5. Prepare filling by combining brown sugar, cocoa powder, cinnamon, and vanilla extract in a small bowl.
  6. Roll dough into a rectangle; spread softened butter followed by the filling evenly.
  7. Roll tightly into a log shape and cut into 9–11 individual rolls.
  8. Place rolls in a baking dish with space between them; cover and let rise for another 30–60 minutes.
  9. Preheat oven to 350°F (180°C) and bake for about 20–25 minutes until golden brown.
  10. For glaze: mix powdered sugar with cocoa powder and heavy cream; pour over warm rolls before serving.
