Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with cupcake liners.
  2. In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, and salt until well combined.
  3. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition. Stir in brewed coffee, milk, and vanilla extract.
  4. Gradually fold the dry ingredients into the wet mixture until just combined; avoid overmixing.
  5. Fill each cupcake liner about two-thirds full with batter and bake for 18-20 minutes or until a toothpick comes out clean.
