  • 1½ cups powdered icing sugar
  • ½ cup unsalted butter (room temperature)
  • 1 tablespoon milk
  • ½1 teaspoon mint extract (depending on your tastes)
  • green food coloring (optional)
  • ¾ cup semisweet chocolate chips or chopped chocolate (130 grams)
  • 1 tablespoon oil

Instructions

  1. Preheat your oven to 350°F (175°C). In a bowl, cream together room-temperature butter and granulated sugar until fluffy. Add vanilla and egg; mix well.
  2. In another bowl, whisk flour, cocoa powder, baking soda, and salt. Gradually add the dry mixture to the wet ingredients until just combined.
  3. Scoop dough onto parchment-lined baking sheets and bake for 10 minutes. Cool on baking sheets before transferring to wire racks.
  4. For the mint frosting, beat powdered icing sugar with room-temperature butter until smooth. Mix in milk and mint extract; add food coloring if desired.
  5. Spread the mint frosting over cooled cookies.
  6. For the ganache topping, melt semisweet chocolate chips with oil until smooth and drizzle over frosted cookies.
