  • 220 millilitres Whole milk
  • 1 packet (11 grams) Fast-action dried yeast
  • 50 grams Caster sugar
  • 1 medium Egg (room temperature)
  • 1 medium Egg yolk (room temperature)
  • 460 grams Strong white bread flour (plus more for dusting)
  • 50 grams Cocoa powder
  • 1 teaspoon Salt
  • 60 grams unsalted butter (room temperature)
  • 120 grams light brown sugar/muscovado sugar
  • 4 teaspoons ground cinnamon
  • 1 large Orange (zest only)
  • 50 grams Milk chocolate
  • 75 grams Full-fat cream cheese (room temperature)
  • 50 grams Icing sugar
  • 1 large Orange (juice only)

Instructions

  1. Warm the milk and melt the butter together. Add yeast and sugar, letting it sit until frothy.
  2. Mix flour, cocoa powder, and salt in a large bowl. Make a well in the center and add the wet mixture along with eggs.
  3. Knead the dough on a floured surface until smooth and elastic (about 8-10 minutes).
  4. Place in an oiled bowl, cover with cloth, and let rise until doubled in size (1-2 hours).
  5. Prepare the filling by mixing softened butter, brown sugar, cinnamon, and orange zest.
  6. Roll out the dough into a rectangle and spread the filling evenly before rolling tightly.
  7. Slice into pieces and place in a baking dish; let rise again until puffy (about 1 hour).
  8. Bake at 180°C (350°F) for about 20 minutes until golden brown.
  9. For frosting, melt chocolate and mix with cream cheese, icing sugar, and orange juice until smooth.
  10. Frost warm rolls before serving.
