  • 6 Tablespoons (75g) granulated sugar, divided
  • 1 Tablespoon (9g) active dry or instant yeast
  • 5 Tablespoons (71g) unsalted butter, melted and slightly cooled
  • 2 large eggs, at room temperature
  • 1 teaspoon salt
  • 4 cups (530g) bread flour, plus more as needed
  • 6 Tablespoons (85g) unsalted butter, softened to room temperature
  • 1/2 cup (100g) packed light or dark brown sugar
  • 2 Tablespoons (10g) unsweetened natural or Dutch process cocoa powder
  • 1 teaspoon ground cinnamon
  • 1 teaspoon pure vanilla extract
  • 3/4 cup (135g) semi-sweet chocolate chips

Instructions

  1. Activate the yeast by whisking warm milk, 2 tablespoons of sugar, and yeast in a stand mixer bowl. Let sit until foamy (about 5 minutes).
  2. Add remaining sugar, melted butter, eggs, salt, and 1 cup of flour; mix on medium speed until combined.
  3. Gradually add 3 cups of flour at low speed until a soft dough forms.
  4. Knead for 6–8 minutes until smooth and slightly tacky.
  5. Place dough in a greased bowl and let it rise in a warm spot until doubled (about 2 hours).
  6. Roll out the dough into a rectangle; spread filling mixture over it and add chocolate chips.
  7. Roll tightly into a log, slice into pieces, and let rise again (about 1 hour).
  8. Bake at 350°F (177°C) for 25–28 minutes until lightly browned.
  9. Prepare icing while rolls cool; drizzle over warm rolls.
