2 pounds chicken breasts, cut into cubes
2/3 cup buffalo sauce
1/4 cup honey
2 tablespoons extra virgin olive oil
1 tablespoon seasoned salt
6 cups shredded lettuce
1/3 cup fresh cilantro, chopped
1 cup cherry tomatoes, sliced
1 cup grilled corn kernels (about 2 ears)
1/4 cup chopped peperoncini
1 cup cubed cheddar cheese or feta
1 avocado, chopped
1/2 cup plain Greek yogurt
1/3 cup mayo
1/2 cup pickled jalapeños
3 tablespoons fresh basil
2 tablespoons chopped fresh dill
1 teaspoon garlic powder
Kosher salt and black pepper to taste
Instructions
In a bowl, mix buffalo sauce and honey until well combined.
Marinate chicken cubes in olive oil, seasoned salt, and half of the buffalo mixture for at least 30 minutes.
Thread chicken onto skewers and grill on medium-high heat for about 10-12 minutes until cooked through.
In a blender, combine dressing ingredients and blend until creamy.
Toss shredded lettuce, cilantro, tomatoes, grilled corn kernels, and peperoncini with some dressing; top with grilled skewers and avocado before serving.
