  • 2 tbsp unsalted butter
  • 1/4 cup packed light brown sugar
  • 2 cups diced apples
  • 1/2 cup melted unsalted brown butter
  • 2 large eggs
  • 1 tbsp pure vanilla extract
  • 1 1/2 cups cake flour
  • 1 1/2 tsp baking powder
  • 1 1/2 tsp ground cinnamon
  • 1/2 tsp ground nutmeg
  • 1/2 tsp kosher salt
  • 4 oz cream cheese, softened
  • 3 1/2 cups powdered sugar
  • 2 tsp ground cinnamon
  • 2 tbsp apple cider reduction

Instructions

  1. Cook diced apples with light brown sugar, ground cinnamon, and apple cider reduction until softened.
  2. Reduce apple cider by simmering until half its volume.
  3. Combine dry ingredients: flour, baking powder, cinnamon, nutmeg, salt.
  4. Beat melted brown butter with sugars until smooth.
  5. Mix in eggs one at a time along with vanilla extract.
  6. Alternate adding dry mixture and apple cider reduction until just combined.
  7. Fold in cooked apples.
  8. Bake at 350°F (175°C) for 20-25 minutes or until a toothpick comes out clean.
  9. Prepare frosting by combining cream cheese, softened brown butter, powdered sugar, cinnamon, vanilla extract, and apple cider reduction until creamy.
  10. Frost cooled cupcakes and garnish as desired.
