  • 1 cup granulated sugar
  • 1 cup light brown sugar, packed
  • 2 large eggs
  • 2 teaspoons vanilla extract
  • 2 cups all-purpose flour (or gluten-free flour blend)
  • ½ teaspoon baking powder
  • ¼ teaspoon salt
  • For Cinnamon Swirl: 1 tablespoon melted butter, 2 tablespoons ground cinnamon, ½ cup light brown sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13-inch baking dish or line it with parchment paper.
  2. In a mixing bowl, combine melted butter with granulated and brown sugars until smooth. Add eggs one at a time and then mix in vanilla extract.
  3. Stir in flour, baking powder, and salt until just combined.
  4. To prepare the cinnamon swirl, mix melted butter, ground cinnamon, and brown sugar in a small bowl.
  5. Spread half of the blondie batter into the prepared pan. Drop half of the cinnamon mixture over it and gently swirl using a knife. Repeat with remaining batter and cinnamon mixture.
  6. Bake for 25-30 minutes until a toothpick inserted comes out with moist crumbs.
  7. Allow to cool for about 10 minutes before slicing into squares.
