8 slices rye bread
4 tablespoons unsalted butter (softened)
1 pound sliced turkey or beef
1/2 cup sauerkraut (drained)
8 slices Swiss cheese
Russian dressing (homemade)
Instructions
Make the Russian dressing by mixing mayonnaise, ketchup, shallots, horseradish, Worcestershire sauce, hot sauce, and sweet paprika in a bowl. Set aside.
Butter one side of each slice of rye bread.
Assemble the sandwiches: Spread Russian dressing on the unbuttered side of four slices, layer on cooked turkey or beef, drained sauerkraut, and Swiss cheese. Top with remaining slices of bread (buttered side out).
Heat a skillet over medium-low heat and grill the sandwiches for about 5 minutes on each side until golden brown and the cheese is melted.
Remove from heat and allow to rest for a minute before slicing diagonally.
