Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 1 cup full-fat coconut milk
  • 1/4 cup fresh lime juice (about 2 limes)
  • Zest of 3 limes
  • 3 cloves garlic (minced)
  • 1 tablespoon soy sauce
  • 1 tablespoon honey
  • 2 tablespoons olive oil
  • 1 cup basmati rice
  • Salt and black pepper to taste
  • Fresh cilantro (for garnish)

Instructions

  1. Marinate the chicken: In a bowl, mix coconut milk, lime juice, lime zest, garlic, soy sauce, honey, salt, and black pepper. Add chicken to coat well. Cover and refrigerate for at least 30 minutes.
  2. Cook the rice: Rinse basmati rice until water runs clear. In a saucepan, combine rice with water, coconut milk, and salt. Bring to a boil; reduce heat and simmer covered for about 15-20 minutes until fluffy.
  3. Cook the chicken: In a skillet over medium-high heat, warm olive oil. Remove chicken from marinade (discard marinade) and cook for about 5-7 minutes per side until golden brown and cooked through.
  4. Serve: Plate rice as a base; top with chicken. Garnish with lime zest and chopped cilantro.
