  • 1 lb fresh shrimp
  • 2 stalks celery (finely chopped)
  • 2 tablespoons red onion (finely chopped)
  • 1.5 tablespoons dried dill (or 3 tablespoons fresh)
  • 2 tablespoons mayonnaise
  • 1 tablespoon fresh lemon or lime juice
  • Salt and ground white pepper to taste

Instructions

  1. In a large stockpot, add water and one package of shrimp boil seasoning. Bring to a boil.
  2. Add shrimp with shells on, cooking for 5-8 minutes until pink. Remove with a strainer and chill on ice until cool.
  3. Peel and devein cooled shrimp, then chop finely and season.
  4. In a large bowl, mix mayonnaise, celery, red onion, dill, and citrus juice until well combined.
  5. Add seasoned shrimp to the dressing mixture; coat thoroughly.
  6. Cover and chill in the refrigerator for at least 30 minutes before serving.
