  • 1 cup apple vinegar or extra beef stock
  • 2 1/2 cups beef stock
  • Fresh rosemary

Instructions

  1. Preheat your oven to 300°F (150°C). Season the chuck roast with salt and pepper.
  2. In a large Dutch oven, heat olive oil over medium-high heat. Sear the roast on all sides until browned, then remove from the pan.
  3. Add sliced onions to the same pot and sauté over medium heat until soft and translucent, about 10-15 minutes. Stir in minced garlic, followed by flour and maple syrup; cook for another minute.
  4. Pour in apple vinegar and beef stock, returning the roast to the pot along with fresh herbs. Bring to a gentle simmer, cover tightly.
