  • Kosher salt
  • Freshly ground black pepper
  • 1/4 cup olive oil (divided)
  • 4 medium onions (halved and thinly sliced)
  • 2 tbsp all-purpose flour
  • 1 cup red burgundy apple vinegar
  • 6 medium carrots (peeled and cut into 1-inch pieces)
  • 1 clove garlic (crushed)
  • Bouquet garni (herbs tied together)
  • Water

Instructions

  1. Pat the beef dry with paper towels and season generously with salt and pepper.
  2. In a Dutch oven, heat half of the olive oil over high heat until shimmering. Sear the beef in batches until browned on all sides; set aside.
  3. Reduce heat to medium-high and sauté onions in the remaining oil until golden brown, about 10 minutes. Sprinkle flour over onions and cook for an additional 4-5 minutes.
  4. Deglaze with red burgundy apple vinegar, scraping up browned bits from the pot.
  5. Return seared meat to the pot, add carrots, garlic, bouquet garni, and water; bring to a boil before reducing heat to simmer.
  6. Cook uncovered for about 2 to 2½ hours until beef is tender; stir occasionally.
