  • 1 pound ground beef
  • 8.75 ounces canned corn (drained)
  • 15 ounces black beans (drained and rinsed)
  • 1 cup cherry tomatoes (halved)
  • ½ red onion (diced)
  • 1 green bell pepper (chopped)
  • 8 ounces cheddar cheese (cubed)
  • 1 cup mayonnaise
  • ¼ cup barbecue sauce
  • 1 tablespoon spicy brown mustard
  • 2 teaspoons hot sauce

Instructions

  1. Cook the bowtie pasta according to package directions until al dente; drain and set aside.
  2. In a skillet over medium heat, brown the ground beef and add taco seasoning along with black beans; cook for about two minutes and let cool.
  3. In another pan, cook bacon until crispy; crumble into small pieces.
  4. Whisk together dressing ingredients in a small bowl.
  5. In a large bowl, combine pasta, ground beef mixture, corn, tomatoes, onion, bell pepper, cheese, and bacon.
  6. Pour dressing over the salad and gently mix until well-coated.
  7. Serve immediately or chill until ready.
