4 large russet potatoes
1 pound boneless skinless chicken breast
1 tablespoon ranch seasoning mix
4 ounces cream cheese
3 slices cooked turkey bacon (diced)
1 cup freshly grated sharp cheddar cheese

Instructions
Preheat oven to 400°F (200°C). Scrub the russet potatoes clean, dry them, prick with a fork, and bake directly on the oven rack for 45-60 minutes until tender.
In a pot of salted water, simmer chicken breasts until fully cooked (internal temperature reaches 165°F), about 20-30 minutes. Shred the chicken after resting.
