  • 1/2 cup granulated sugar
  • 1/2 cup light brown sugar, packed
  • 1 large egg, room temperature
  • 2 teaspoons vanilla extract
  • 3 1/4 cups all-purpose flour, spooned and leveled
  • 3/4 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/4 teaspoon kosher salt
  • 2 1/2 cups fresh or frozen cranberries
  • 2/3 cup granulated sugar
  • 1 tablespoon cornstarch
  • 1 tablespoon orange zest
  • 1 tablespoon orange juice
  • 1 teaspoon vanilla extract
  • 3/4 cup powdered sugar, sifted
  • 4 tablespoons whole milk or heavy cream
  • 1/2 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a stand mixer, cream together unsalted butter, granulated sugar, and brown sugar until fluffy.
  3. Add an egg and vanilla; mix well.
  4. In a separate bowl, whisk flour, baking powder, cinnamon, and salt.
  5. Combine wet and dry ingredients until just mixed.
  6. Reserve about 2 cups of dough; press the rest into an 8×8-inch baking pan.
  7. Bake crust for 15 minutes or until golden at the edges.
  8. Meanwhile, mix cranberries with sugar, cornstarch, orange zest, juice, and vanilla; pour over crust.
  9. Crumble reserved dough over the filling; bake for an additional 45 minutes.
  10. Let cool completely before slicing.
