  • 2 boneless, skinless chicken breasts
  • 1 tsp salt
  • ¼ tsp freshly cracked black pepper
  • 1 tsp sweet paprika
  • 1 tsp onion powder
  • 1 tsp dried thyme
  • ¼ cup plain (all-purpose flour)
  • 1 tbsp olive oil
  • 2 tbsp unsalted butter
  • 1 tbsp minced garlic
  • ½ cup chicken stock
  • 300 ml thickened cream
  • 1 tsp dijon mustard
  • ½ cup grated parmesan cheese
  • Sea salt flakes to taste
  • Freshly cracked black pepper to taste
  • Mashed potatoes, steamed rice or pasta
  • Steamed greens
  • 1 tbsp finely chopped flat-leaf parsley
  • Lemon wedges

Instructions

  1. Season the chicken breasts with salt, pepper, paprika, onion powder, and thyme. Dredge in flour until well coated.
  2. Heat olive oil and 1 tablespoon of butter in a frying pan over medium-high heat. Cook the chicken for about 5–6 minutes on each side until golden brown. Remove from pan.
  3. In the same pan, melt the remaining butter and sauté minced garlic for about 30 seconds.
  4. Pour in chicken stock and reduce by half before adding cream and dijon mustard. Simmer until slightly thickened.
  5. Stir in parmesan cheese until melted, then return the chicken to the pan for an additional 2–3 minutes.
  6. Serve with mashed potatoes or pasta, garnished with parsley and lemon wedges.
