  • 1/2 cup chicken broth
  • 1/2 cup heavy cream (or half-and-half)
  • 1/3 cup grated Parmesan cheese
  • 1.5 lbs Yukon gold or russet potatoes, peeled and cubed
  • 3 cups baby carrots
  • 1 tbsp olive oil
  • 1 tbsp butter
  • 3 cloves garlic, minced
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme
  • 1/2 tsp dried rosemary
  • To taste salt and pepper
  • 23 tbsp butter (for mashed potatoes)
  • 1/2 cup milk or cream (for mashed potatoes)
  • 2 tbsp butter (for glazed carrots)
  • 1 tbsp brown sugar or honey (for glazed carrots)
  • 1/4 tsp salt (for glazed carrots)
  • Pinch cinnamon or thyme (optional)

Instructions

  1. Sear the seasoned chicken in a skillet with olive oil and butter until golden brown. Set aside.
  2. In the same skillet, sauté minced garlic and herbs until fragrant. Add chicken broth and heavy cream; simmer until slightly thickened.
  3. Return the chicken to the skillet to coat in the sauce.
  4. Boil cubed potatoes in salted water until tender; mash with butter and milk until smooth.
  5. In another pan, glaze carrots with butter, brown sugar/honey, and salt until tender.
