  • 1 tablespoon olive oil
  • 1 small onion, diced
  • 3 cloves garlic, minced
  • 1 pound lean ground beef (90/10 or 93/7)
  • 2 tablespoons tomato paste
  • 1 teaspoon Italian seasoning
  • 1 teaspoon smoked paprika
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup beef broth
  • 1/2 cup Greek yogurt or cottage cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add diced onion and cook until soft (about 3-4 minutes).
  2. Stir in minced garlic and cook for another 30 seconds. Add ground beef and cook until browned.
  3. Mix in tomato paste, Italian seasoning, smoked paprika, salt, and pepper; cook for an additional 2 minutes.
  4. Pour in beef broth and bring to a simmer for about 5-6 minutes.
  5. Reduce heat to low; stir in Greek yogurt or cottage cheese until creamy.
  6. Cook pasta according to package directions until al dente; drain and add to skillet.
  7. Fold in mozzarella and Parmesan until melted.
  8. Serve hot, garnished with chopped parsley if desired.
