  • Oil from sundried tomatoes
  • 1 cup dry black, brown, or green lentils
  • 1 small red onion (finely diced)
  • 6 cloves garlic (crushed)
  • 2 tsp fennel seeds (crushed)
  • 3 tbsp tomato paste
  • ½ cup sundried tomatoes (chopped)
  • 2 cups vegetable stock
  • ¾ cup coconut cream
  • 1 cup nutritional yeast
  • Fresh basil (chopped)
  • Lemon wedges

Instructions

  1. Cook lentils according to package or use an Instant Pot for quick results.
  2. Sauté red onion in oil from sundried tomatoes until soft. Add garlic and crushed fennel seeds.
  3. Stir in tomato paste and sundried tomatoes; mix well.
  4. Combine cooked lentils into the sautéed mixture; stir thoroughly.
  5. Add vegetable stock and simmer covered for about 10 minutes.
  6. Lower heat; mix in coconut cream, nutritional yeast, and chopped basil until melted.
  7. Let rest for five minutes before serving with lemon wedges.
