  • 2 tbsp olive oil
  • 810 sliced mushrooms
  • 2 minced garlic cloves
  • 150 g linguine
  • 1 cup cooking cream
  • 1/2 tsp crushed black pepper
  • 1/3 chicken stock cube
  • 1/2 tsp dried basil leaves
  • 1 cup baby spinach
  • 2 tbsp pine nuts
  • 1/4 cup grated Parmesan cheese

Instructions

  1. Cook linguine according to package instructions until al dente.
  2. In a medium pan over medium-high heat, heat olive oil and sauté sliced mushrooms until golden brown.
  3. Add minced garlic to the pan, cooking for about two minutes until fragrant.
  4. Reduce heat to medium-low, pour in cooking cream, black pepper, chicken stock cube, and basil; simmer for 4-5 minutes until thickened.
  5. Stir in grated Parmesan until melted.
  6. Drain pasta (do not rinse) and add it to the sauce; toss until coated.
  7. Mix in baby spinach until wilted.
  8. Toast pine nuts in a separate pan over high heat until golden brown.
  9. Serve pasta topped with toasted pine nuts and extra Parmesan.
