  • 1/3 cup dry white grape juice
  • 1/4 teaspoon Italian seasoning
  • 1 teaspoon lemon juice
  • 1 teaspoon flour
  • 1/2 teaspoon Dijon mustard
  • 1 cup heavy cream
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: Freshly grated parmesan cheese

Instructions

  1. Cook the pasta: Boil salted water in a large pot and cook the pasta until al dente according to package directions (about 8-10 minutes). Drain and set aside.
  2. Sauté the mushrooms: In a skillet over medium-high heat, melt butter with olive oil. Add sliced mushrooms and garlic; sauté for about 5 minutes until golden brown.
  3. Create the sauce base: Remove mushrooms from the skillet. In the same pan, mix grape juice, Italian seasoning, lemon juice, flour, and Dijon mustard until smooth.
  4. Add cream: Gradually stir in heavy cream; let it simmer gently for a few minutes.
  5. Combine: Return sautéed mushrooms to the skillet; season with salt and pepper. Cook for an additional few minutes until thickened.
  6. Toss: Add cooked pasta into the sauce along with fresh parsley and optional parmesan cheese.
