  • 1 lb chicken or turkey sausage
  • 1 onion, diced
  • 3 garlic cloves, minced
  • 1/2 tsp red pepper flakes (adjust to taste)
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1/2 cup grated Parmesan cheese
  • 1 cup fresh spinach, chopped
  • 1 can (14.5 oz) diced tomatoes, undrained
  • 1 can (15 oz) cannellini beans, drained and rinsed
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, brown the sausage for about 5 minutes until golden.
  2. Add the diced onion and minced garlic to the pot; cook until softened (about 5 minutes).
  3. Stir in red pepper flakes and pour in chicken broth; bring to a simmer.
  4. Mix in heavy cream and grated Parmesan cheese until well combined.
  5. Add chopped spinach, diced tomatoes, and cannellini beans; season with salt and pepper.
