  • 15.87 oz Mascarpone cheese
  • 1 tsp Vanilla extract
  • 1/2 cup Pumpkin puree
  • 2/3 cup Granulated sugar
  • 1/3 cup Brown sugar
  • 2 tsp Pumpkin pie spice
  • 1/4 tsp Kosher salt
  • 2 cups Heavy cream (cold)
  • 28 Ladyfingers
  • 2 cups Coffee (espresso or strong coffee)

Instructions

  1. Brew espresso coffee and let it cool slightly.
  2. In a large bowl, mix mascarpone, sugars, pumpkin pie spice, and salt until combined.
  3. Gently fold in pumpkin puree until well mixed.
  4. Whip cold heavy cream until thickened, then fold into the mascarpone mixture.
  5. Quickly dip ladyfingers in cooled coffee and layer them in a baking dish.
  6. Spread half of the mascarpone mixture over the ladyfingers; repeat layers.
  7. Pipe more filling on top for decoration.
  8. Cover and chill for at least 4 hours or overnight.
  9. Dust with cocoa powder before serving.
