  • 4 boneless skinless chicken breasts
  • 1 cup long-grain white rice
  • 2 cups chicken broth (divided)
  • 2 tablespoons unsalted butter
  • 1½ cups whole milk
  • ½ cup shredded cheddar cheese
  • ½ cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon smoked paprika
  • ¼ teaspoon thyme
  • Salt and black pepper (to taste)
  • 2 tablespoons olive oil

Instructions

  1. Season the chicken with garlic powder, onion powder, smoked paprika, salt, and black pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Sear the chicken until golden brown on both sides and cooked through. Remove from skillet and set aside.
  3. In the same skillet, melt butter over medium heat. Whisk in flour to create a roux and cook for 1-2 minutes.
  4. Gradually whisk in milk and ½ cup of chicken broth until smooth; cook until thickened.
  5. Stir in garlic powder, thyme, cheddar cheese, and Parmesan cheese until melted.
  6. Return chicken to skillet, cover with sauce, reduce heat to low, and simmer for 10 minutes.
  7. Meanwhile, cook rice according to package instructions using remaining chicken broth.
  8. Serve chicken over rice with extra sauce.
