  • 4 ounces cream cheese (room temperature)
  • 1/3 cup sour cream
  • 1 pound short pasta
  • 2 cups grilled or roasted corn (from fresh ears)
  • 1 avocado (diced)
  • Fresh herbs: basil and cilantro (torn and chopped)
  • Spices: smoked paprika, chili powder, cayenne pepper
  • 2 tablespoons extra virgin olive oil
  • 12 grated garlic cloves
  • 1 tablespoon fresh chives, chopped
  • Salt and pepper to taste
  • 1 head romaine lettuce, shredded
  • 1/2 cup spicy cheddar cheese, diced
  • 4 tablespoons salted butter
  • 1/4 cup mayonnaise or yogurt
  • 2 tablespoons lime juice

Instructions

  1. Cook the short pasta according to package instructions until al dente. Drain and set aside.
  2. In a bowl, mix together cream cheese, sour cream, olive oil, grated garlic, chives, salt, and pepper until smooth.
  3. Combine the cooked pasta with shredded romaine lettuce, grilled corn, torn basil and cilantro, diced spicy cheddar cheese, and avocado in a large mixing bowl.
  4. Pour the creamy dressing over the mixture and gently fold until everything is well-coated.
  5. Melt butter in a pan; stir in smoked paprika and chili powder. Drizzle this over your salad along with lime juice and mayonnaise (or yogurt), tossing again before serving.
