  • 2 lbs potatoes, thinly sliced
  • 1/4 cup balsamic vinegar
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste
  • Grated Parmesan cheese (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a bowl, whisk together balsamic vinegar, olive oil, minced garlic, chopped thyme, salt, and pepper.
  3. Layer half of the sliced potatoes in a greased round baking dish and drizzle with half of the balsamic mixture.
  4. Add the remaining potato slices on top and drizzle with the rest of the mixture.
  5. Cover with foil and bake for 45 minutes.
  6. Remove foil; sprinkle grated Parmesan if desired. Bake uncovered for an additional 15-20 minutes until golden brown and crispy.
  7. Allow to cool slightly before slicing and serving.
