  • 1 Tbsp avocado oil (for cooking)
  • 1/2 cup coconut aminos
  • 1 Tbsp rice vinegar
  • 2 large cloves garlic (minced)
  • 1 tsp sriracha (optional)
  • 2 tsp toasted sesame oil (optional)
  • 1 Batch Asian Cucumber Salad
  • 3 cups cooked brown rice
  • 1 large head broccoli (chopped into florets)
  • 1 large ripe avocado (sliced)

Instructions

  1. Prepare the cucumber salad by mixing the ingredients in a bowl and letting them marinate for at least 15 minutes.
  2. Cook the brown rice according to package instructions.
  3. In a bowl, combine Greek yogurt (or mayonnaise), sweet chili sauce, and sriracha for the bang bang sauce; refrigerate until ready.
  4. Steam or sauté broccoli until bright green and tender-crisp.
  5. Heat avocado oil in a skillet over medium-high heat. Add salmon chunks and cook until golden brown on all sides.
  6. Assemble the bowls by layering cooked rice, broccoli, salmon bites, cucumber salad, and avocado slices; drizzle with bang bang sauce.
