  • 1 medium sweet potato
  • 1 small onion
  • 2 garlic cloves
  • Olive oil for frying
  • 1 ripe avocado
  • Fresh cilantro
  • Lime juice
  • 1/2 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon ground coriander
  • Salt and pepper to taste
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons flour (or chickpea flour for gluten-free)
  • 2 tablespoons plain yogurt
  • 23 tablespoons water to thin, as needed

Instructions

  1. Cook red lentils in a saucepan with 2 cups of water for 10–12 minutes until soft.
  2. In a bowl, combine cooked lentils, grated sweet potato, chopped onion, minced garlic, spices, salt, pepper, chopped cilantro, and flour. Mix until it holds together.
  3. Form small patties and pan-fry in olive oil over medium heat for 3–4 minutes on each side until golden brown and crispy.
  4. Blend avocado, cilantro, garlic, lime juice, yogurt, salt, and water to create a creamy sauce.
  5. Serve warm with the sauce on the side or drizzled on top.
