  • 4 boneless, skinless chicken breasts
  • 1 box (6 oz) stuffing mix
  • 1 can (10.5 oz) cream of chicken soup
  • 1/2 cup sour cream
  • 1 cup low-sodium chicken broth
  • 2 cups frozen mixed vegetables
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon dried thyme
  • Salt and pepper to taste

Instructions

  1. Spray the inside of the crock pot with non-stick cooking spray and place chicken breasts at the bottom.
  2. Season chicken with garlic powder, dried thyme, salt, and pepper.
  3. In a bowl, combine cream of chicken soup, sour cream, and chicken broth until smooth.
  4. Spread the mixture over the chicken and top with frozen mixed vegetables.
  5. Sprinkle stuffing mix over the veggies and gently press down.
  6. Cover and cook on low for 6 hours until the chicken is done and stuffing is tender.
