  • 4 large croissants
  • 8 slices of cheese (gouda, baby swiss, cheddar)
  • ½ pound deli-sliced chicken
  • 5 large eggs
  • 2 tablespoons dijon mustard
  • 2 tablespoons salted butter
  • 2 tablespoons honey
  • Salt and pepper to taste
  • Fresh chives for garnish (optional)

Instructions

  1. Preheat your oven to 350°F.
  2. In a small bowl, mix dijon mustard, salted butter, and honey; microwave until melted and combine well.
  3. Slice each croissant in half horizontally and brush the cut sides with the dijon butter mixture.
  4. Layer each bottom half with one slice of cheese, chicken slices, and another cheese slice before topping with the other half of the croissant.
  5. Place assembled sandwiches on a baking sheet and bake for 10-15 minutes until golden brown and cheese is melted.
  6. Meanwhile, whisk eggs with milk, salt, and pepper. Cook in a skillet over medium heat until soft scrambled.
  7. Once baked, add a spoonful of scrambled eggs to each sandwich and garnish with chives if desired.
