  • 1 tbsp sesame seeds
  • 1 clove garlic (minced)
  • 2 tbsp fresh parsley (chopped)
  • 1 tbsp olive oil
  • 1 tbsp lemon juice
  • 1 tsp gochugaru (Korean red chili flakes)
  • 1 tsp soy sauce
  • ½ tsp sugar (or maple syrup/agave)

Instructions

  1. Wash and dry the cucumber and carrots. Julienne them into thin strips using a sharp knife or julienne peeler. Place in a large mixing bowl.
  2. In a small bowl, whisk together the olive oil, lemon juice, gochugaru, soy sauce, and sugar until well combined.
  3. Pour the dressing over the veggies and add minced garlic and chopped parsley. Toss gently until evenly coated.
