1 tablespoon olive oil
1 lb ground beef
½ cup diced onion
1 tablespoon minced garlic
3 cups diced red bell pepper
2 cups low sodium beef broth
15 oz can tomato sauce
1 cup dry white rice
½ teaspoon dried basil
½ teaspoon dried oregano
½ teaspoon dried parsley
¼ teaspoon black pepper
1 cup shredded mozzarella cheese
Instructions
In a large sauté pan, heat olive oil over medium-high heat. Add ground beef and cook until browned (about 10 minutes), breaking it apart as it cooks.
Stir in diced onions and garlic; sauté for 3 minutes until soft.
Add diced bell peppers, beef broth, tomato sauce, rice, and spices; mix well. Bring to a boil, then cover and simmer for 20-25 minutes until rice is cooked.
Top with mozzarella cheese; cover again until melted.
