  • 1 lb ground beef
  • ½ cup diced onion
  • 1 tablespoon minced garlic
  • 3 cups diced red bell pepper
  • 2 cups low sodium beef broth
  • 15 oz can tomato sauce
  • 1 cup dry white rice
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ½ teaspoon dried parsley
  • ¼ teaspoon black pepper
  • 1 cup shredded mozzarella cheese

Instructions

  1. In a large sauté pan, heat olive oil over medium-high heat. Add ground beef and cook until browned (about 10 minutes), breaking it apart as it cooks.
  2. Stir in diced onions and garlic; sauté for 3 minutes until soft.
  3. Add diced bell peppers, beef broth, tomato sauce, rice, and spices; mix well. Bring to a boil, then cover and simmer for 20-25 minutes until rice is cooked.
  4. Top with mozzarella cheese; cover again until melted.
