  • 4 fresh corn ears or 16 oz frozen fire-roasted corn
  • 1/2 cup chopped red onion
  • 1 jalapeño, seeded and chopped
  • 2 minced cloves of garlic
  • 1/4 cup cotija cheese (or feta/parmesan)
  • 2 tablespoons plain Greek yogurt
  • 2 tablespoons mayo (or vegan mayo)
  • Juice from 1 lime
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon paprika
  • 1/4 teaspoon sea salt
  • 1/4 teaspoon ground black pepper
  • 1/3 cup fresh cilantro, chopped (plus more for garnish)

Instructions

  1. Grill fresh corn for about 10 minutes on medium-high heat until charred. Alternatively, roast frozen corn in a preheated oven at 400°F for 15-20 minutes.
  2. In a mixing bowl, combine chopped red onion, jalapeño, garlic, and grilled corn.
  3. In another bowl, whisk together Greek yogurt, mayo, lime juice, chili powder, paprika, salt, and pepper until smooth.
  4. Pour dressing over corn mixture and gently combine until well mixed.
  5. Let the salad rest for at least 15 minutes before serving.
  6. Garnish with additional cotija cheese and fresh cilantro.
