  • 3 tablespoons corn oil (or high-heat oil)
  • 3 pounds stew meat (beef or lamb)
  • 1 onion, roughly sliced
  • 1 celery stick, sliced
  • 4 medium carrots, cut into 12” pieces
  • 2 cloves garlic, minced
  • ¼ cup tomato paste
  • ¼ cup all-purpose flour
  • 4 cups beef broth
  • 1½ cups stout beef broth (non-alcoholic)
  • 2 pounds small yellow potatoes, halved
  • Sea salt and pepper to taste
  • 2 bay leaves
  • 1 teaspoon dried thyme
  • 2 tablespoons fresh parsley, chopped

Instructions

  1. Heat your Dutch oven over medium-high heat and add corn oil.
  2. Sear the stew meat until browned on all sides; remove from pot.
  3. Add onions, celery, and carrots to the pot; sauté until softened.
  4. Stir in minced garlic and cook for another minute.
  5. Incorporate tomato paste and flour; cook for two minutes.
  6. Gradually stir in beef broth and stout broth until smooth.
  7. Return seared meat to the pot along with potatoes, bay leaves, and thyme.
  8. Cover and transfer to an oven preheated to 320°F (160°C) for 2½ to 3 hours.
