  • 1 lb salmon, cubed
  • 1 ½ cup uncooked sushi rice
  • 3 large nori sheets
  • 1 tbsp Kewpie mayo
  • 1 tbsp sriracha
  • 1 tbsp light soy sauce
  • 1 tsp sesame oil
  • 1 tbsp rice vinegar
  • 2 tsp white sugar
  • cooking spray
  • furikake, for garnish
  • 1 green onion, for garnish

Instructions

  1. Cook sushi rice according to package instructions; rinse until water runs clear.
  2. Combine rice vinegar and sugar in a microwave-safe bowl, heat until sugar dissolves, then fold into cooked rice.
  3. Preheat oven to 400°F (200°C).
  4. Mix cubed salmon with light soy sauce, Kewpie mayo, sriracha, and sesame oil in a bowl.
  5. Cut nori sheets into squares fitting muffin tin slots; lightly grease with cooking spray.
  6. Press sushi rice into each nori square, then top with the salmon mixture.
  7. Bake for about 15 minutes until salmon is cooked through and tops are golden brown.
  8. Garnish with additional sriracha and green onions before serving.
