  • 1 tablespoon vegetable oil
  • 1 teaspoon vegetable oil (separated)
  • 2 1/2 cups fresh green beans, trimmed and cut into 1-inch pieces
  • 1 pound boneless, skinless chicken breasts, cut into 1-inch chunks
  • 2 teaspoons minced garlic
  • 1/4 cup low-sodium chicken broth (or water)
  • 1/4 cup soy sauce
  • 3 tablespoons honey
  • 2 teaspoons corn starch
  • Salt and pepper, to taste

Instructions

  1. Heat 1 tablespoon of vegetable oil in a large skillet over medium-high heat.
  2. Add chicken chunks, cooking until golden brown (about 5 minutes). Remove from the skillet.
  3. If needed, add another teaspoon of oil and sauté minced garlic until fragrant (30 seconds).
  4. Return chicken to the skillet and pour in chicken broth, soy sauce, and honey; simmer for 5 minutes.
  5. Mix corn starch with a tablespoon of water and stir into the skillet; let thicken.
  6. Sauté green beans in the same skillet for 4-5 minutes until tender-crisp.
  7. Combine green beans with the chicken mixture; toss to coat.
