  • 1 tsp dried oregano
  • 2 cloves garlic, minced
  • ½ tsp salt (omit if using salted taco seasoning)
  • 2 cups jarred tomato salsa
  • 1 can black beans (19 oz), rinsed and drained
  • 6 large tortillas
  • 3 cups shredded cheddar cheese

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a skillet over medium-high heat, cook the ground beef with chopped bell pepper and onion until browned and tender (about 5-7 minutes).
  3. Stir in taco seasoning, garlic, and salt; cook for another minute.
  4. Add salsa and black beans; mix well.
  5. In a baking dish, layer two tortillas on the bottom. Spread one-third of the beef mixture followed by one-third of cheese. Repeat two more times.
