  • 2 Fish fillets (cod, tilapia, or salmon)
  • 6 sprigs Thyme (chopped)
  • 3 sprigs Rosemary (chopped)
  • 1 tsp Oregano (dried)
  • 2 tsp Parsley (chopped or dried)
  • 4 Garlic cloves (minced)
  • 1 tsp Basil (chopped, optional)
  • 1 tsp Lemon zest
  • 1 tbsp Lemon juice
  • 1 tbsp Sweet chili sauce
  • ½ tsp Salt
  • ½ tsp Black pepper
  • ¼ cup Olive oil
  • 1 cup Cherry tomatoes
  • ½ cup Olives (pitted)
  • 1 medium Onion (diced)
  • 1 Zucchini (diced)

Instructions

  1. Preheat your oven to 400°F.
  2. In a bowl, mix thyme, rosemary, oregano, parsley, garlic, lemon zest & juice, sweet chili sauce, salt, pepper, and olive oil to create the marinade.
  3. Coat both sides of the fish fillets with the marinade; set aside some for later.
  4. Toss cherry tomatoes, olives, diced onion, and zucchini in the remaining marinade until coated.
  5. Spread the veggies in a greased baking dish and place the fish on top.
  6. Drizzle any leftover marinade over the fish.
  7. Bake for 15 minutes or until the fish flakes easily with a fork.
