- 1 (14-16 pound) whole turkey
- Salt & pepper (to taste)
- 1 cup unsalted butter (softened)
- 1 tablespoon fresh sage (chopped finely)
- 1 tablespoon fresh thyme (chopped finely)
- 1 tablespoon fresh rosemary (chopped finely)
- 4 cloves garlic (minced)
- 1 teaspoon salt
- 1/2 teaspoon pepper (or to taste)
- 1 lemon (halved)
- A few sprigs each of fresh sage, thyme, and rosemary
- 1 head garlic (break into cloves and peel them)
- Prep the turkey by letting it sit at room temperature for an hour before roasting. Remove giblets and pat dry.
- Make the herb butter by mixing softened butter with chopped herbs, garlic, salt, and pepper until well combined.
- Preheat oven to 450°F, then season the turkey inside and out with salt and pepper. Stuff the cavity with lemon halves, garlic cloves, and fresh herbs.
- Rub the herb butter over the turkey skin thoroughly.
- Place the turkey on a roasting rack in a pan and reduce oven temperature to 350°F immediately after placing it inside.
- Roast for approximately 13 minutes per pound until the internal temperature reaches 165°F in the thickest part of the thigh.
- Let the turkey rest for at least 20 minutes before carving to retain juiciness.
