1 (14-16 pound) whole turkey
Salt & pepper (to taste)
1 cup unsalted butter (softened)
1 tablespoon fresh sage (chopped finely)
1 tablespoon fresh thyme (chopped finely)
1 tablespoon fresh rosemary (chopped finely)
4 cloves garlic (minced)
1 teaspoon salt
1/2 teaspoon pepper (or to taste)
1 lemon (halved)
A few sprigs each of fresh sage, thyme, and rosemary
1 head garlic (break into cloves and peel them)
Instructions
Prep the turkey by letting it sit at room temperature for an hour before roasting. Remove giblets and pat dry.
Make the herb butter by mixing softened butter with chopped herbs, garlic, salt, and pepper until well combined.
Preheat oven to 450°F, then season the turkey inside and out with salt and pepper. Stuff the cavity with lemon halves, garlic cloves, and fresh herbs.
Rub the herb butter over the turkey skin thoroughly.
Place the turkey on a roasting rack in a pan and reduce oven temperature to 350°F immediately after placing it inside.
Roast for approximately 13 minutes per pound until the internal temperature reaches 165°F in the thickest part of the thigh.
Let the turkey rest for at least 20 minutes before carving to retain juiciness.
