  • 4 large bell peppers
  • 1 lb lean ground turkey
  • 1 medium onion, chopped
  • 2 cloves minced garlic
  • 2 tablespoons taco seasoning
  • 1 cup canned black beans
  • 1 cup corn
  • 2 cups tomato salsa
  • 1 cup cooked brown rice
  • 1 cup shredded cheese

Instructions

  1. Preheat your oven to 350°F (175°C). Slice each bell pepper in half lengthwise and remove seeds. Place cut-side-up in a baking dish and spray with olive oil; sprinkle with salt and pepper. Bake for 15 minutes.
  2. In a skillet over medium heat, add olive oil and cook ground turkey until browned. Add onions and garlic; sauté until softened. Stir in taco seasoning, corn, black beans, salsa, and cooked rice; simmer for a few minutes.
  3. Fill each pepper half generously with the turkey mixture and top with shredded cheese. Return to the oven for another 15 minutes until cheese is melted.
  4. Serve hot with desired toppings like sour cream, cilantro, lime wedges, or diced avocado.
